When you tell someone that you are a vegetarian do you ever get asked “but what do you eat?”

While I don’t think this question is as common as it once was (i.e. twenty years ago), I still hear it occasionally.

Funny, I never seem to have a problem figuring out what to eat. My problem tends to be planning menus for one week.

There are so many choices for foods and recipes! There are so many new things to try!

Being a vegetarian cook is so much more creative than the chicken and a vegetable or hamburger and a vegetable or a porkchop and a vegetable menus I used to make - long long ago.
We never seem to get bored.

Of course, I could eat tomato sauce and parmesan cheese almost every day <grin>.

Anyway, here are some sample menu plans from the time I was participating in Menu Plan Monday.
